Yellow Zucchini Stir Fry

#SF #cookpadindia The Zucchini Courgette or Baby marrow is a Summer squash. It has a mild flavour, slightly sweet and slightly bitter. Though it can be eaten raw, it's absolutely flavourful even when cooked and enjoyed as a delicious meal. It gets done so easily. Therefore I have preferred to stir fry it for a yummy Breakfast on a weekend. Both Yellow and Green varieties are available aplenty. These are enjoyed in Salads, Stir Frys, Casseroles etc. It can be relished in baked form too. It's a versatile squash rich in Vitamins, Minerals and Plant compounds. High in Fiber and antioxidants, it improves digestion and reduces the risk of type 2 Diabetes. It has a low calorie count which makes it the most loved one with all those health conscious people and fitness freaks out there.

15-18 minutes

Cooking instructions

* Step 1

Heat oil in a wide mouthed pan. Keep the flame on a low. Saute chopped garlic at first for a minute or two. Now add thinly half sliced yellow zucchini as seen.

Saute on a low for the next 10-12 minutes. Do not forget to cover it. Halfway through add in the rest of the ingredients like salt and pepper.

Later as it's done, sprinkle both dry parsley and basil on top. Give it a light mix. And it's perfectly done. It doesn't require much time. Adjust salt and pepper according to one's own taste.

* Step 4

Serve it piping hot alongside any simple Indian Bread. Enjoy!
