Rice Vermicelli with Chicken

#cookpadindia #easy #chicken These thin Rice noodles or Vermicelli are a quick alternative that comes to our rescue when we have had a pretty tired day at our workplace. These can be whipped up in just a matter of few minutes even with a very few pantry staples. Make these thin and melt in mouth noodles for a scrumptious snack time or a full meal that is so so satiating. Green Peas or any other favourite Vegetables can also be added for a healthy full meal. It's absolutely one's own choice. And instead of Chicken, Lamb Mince can also be used. Infact Chicken mince also is a great option. The choices are endless and so are the options too. It's a perfect one to enjoy at Weekends with the whole family being together or on special holidays or occasions as well.

Cooking instructions

* Step 1

Boil a few cups of water as required with salt at first. Take it off the heat and add broken noodles to it and cover.

* Step 2

Allow them to cook in that hot water for about 5 minutes and then drain. Keep that aside.

* Step 3

Now is the time to stir fry the chicken. Add olive oil to a cooking pot. Add garlic mince to it at first. Followed by sliced red onion. Saute it for a minute and then add the chicken. I have used boneless here. Stir fry it on a low to medium-high heat.

* Step 4

Add all the spices mentioned and saute until done. It doesn't take much time. Adjust salt and squeeze some lemon juice on top. Now is the time for plating, add the noodles on a serving plate.Top with the stir fried chicken and serve. Yum!
