Mini Barley Flour and Paneer Parathas

#cookpadindia #innovative These mini Paneer Parathas are with a slight twist by me for a healthy Breakfast using not only Wheat Flour but also the Barley Flour or Jau. Thus these are a perfect choice for a wholesome family meal on any day and especially the Weekends. These can be relished on their own but homemade thick and sweet Curd and some Pickle would be a great accompaniments to it. Cottage Cheese or Paneer Parathas just melts in mouth and has a smooth and a velvety texture. These look delightful too. And make for an amazing idea for Breakfast as well. They can be packed in kids Lunchbox too. And I have used homemade Paneer for making these guilt free parathas and that's what makes them so delish too. Anything homemade is always the best.

Ingredient

Food ration :

4-5 servings

Cooking time :

35-40 minutes

Cooking instructions

* Step 1

Make a soft and a pliable dough out of all the ingredients as mentioned. Cover and keep it aside for about 20 minutes. Add water as required to knead the dough.

* Step 2

For the paneer stuffing or filling, heat a teaspoon of oil. Add cumin seeds, a bit of asafoetida and chopped onions. Saute on a low heat until translucent. Now add the crumbled paneer or cottage cheese with all the spices. Mix well and cook for 2-3 minutes and then finally garnish with lots of chopped coriander leaves and a little garam masala. That's it. It's ready.

* Step 3

Divide the dough into equal sized balls. The filling or the stuffing of paneer can be done in two ways. One is to take a little big bigger sized ball and keep the filling in the centre of it as seen in the pic and bring the edges together and then secure it by pinching thoroughly and proceed to rolling each one of them as needed. Roll them each into a disc of your choice, either big or medium or small. Roast on a preheated griddle or a tawa. Use ghee or oil as needed.

The second way is to roll two small discs at first. Then place the filling in the centre of one of them and then placing the other disc on top of it. And then roll as usual or pat with both the hands giving it a round shape whichever is convenient to you. And roast on a low heat on a preheated griddle or a tawa using oil or ghee as desired.

Stack them up in a casserole to keep them warm as well as soft. Make all in the same way. That's it. Delicious and healthy homemade pure and guilt free parathas for breakfast are all ready to be enjoyed with your loved ones on any given day.
