Winter Vegetable Pasta

#cookpadindia This easy Pasta recipe is made by using both Penne and Spiral Pasta with the goodness of Winter Vegetables. It's a perfect one for Dinner with family on any given day. Made with simple pantry staples and in all Indian style, this one is sure to give you super duper flavours. Easy and a filling Dinner idea for the family. You can make it very quickly and saves you a lot of efforts and time when you are tired. It's a quick fix meal for everyone. It's a delicious simple Pasta with some freshly chopped seasonal Vegetables and a few common spices used in every kitchen. It makes for a complete one pot meal on any day. It can be packed for Lunchbox too. Kids would love it for sure. All in all a very good option for everyday meals. I usually make this for Dinner and enjoy it with some freshly baked Garlic Bread or Sticks.

Cooking instructions

* Step 1

Bring water in a large vessel to a rolling boil at first. Add salt to it according to taste and cook pasta al dente. Meanwhile keep water for boiling with some Salt and a teaspoon of Oil. Boil the Pasta al dente and take care not to over boil it. Drain and keep it ready for use.

* Step 2

Drain and keep aside. In a non-stick pot, heat oil and saute onions until light pink. Add ginger garlic paste and the veggies. Also add chopped tomatoes and cook until soft and mushy. The tomatoes can be blanched and made into a puree as well.

* Step 3

Saute all of that on a low heat for a minute or two and then add the powdered spices. Mix well.

Cover and cook until done for about 15 minutes. After done, adjust salt accordingly and add pasta to it. Mix well and garnish with lots of chopped coriander leaves.

* Step 5

Adjust salt and pepper to taste. Serve hot immediately with some fresh toasted bread. Yum!
