Fresh Coconut and Jaggery Laddoos

Absolutely delicious and healthy, these are made in a jiffy. With Jaggery powder added they adorn a beautiful brown hue. These are loved by the Children and the adults alike. The best part is that these can be made throughout the Year. They can be refrigerated in airtight containers and can be relished for a few Weeks without any problem. And they do not require a long list of ingredients as well. They are done with just a few simple pantry staples. That's it. As easy as that and as simple as anything can be. My family just loves it on any day. I usually make these during the weekends and store. Just before leaving for the School, they eat these beautiful looking Laddoos with a hot glass of flavoured Milk. It's their favourite. And iam relieved to a large extent too. Atleast these are healthy and filling. Otherwise they wouldn't want to eat a proper Breakfast on each single day. These really come to my rescue to a large extent. Let's get started people.

Ghee

Cooking instructions

* Step 1

Add grated Coconut to a kadai with a teaspoon of Ghee or the Clarified Butter. Roast on a low heat for 3-4 minutes. Do not roast it for a long time. Roast just until the moisture is gone.

* Step 2

Add in Cardamom and Jaggery powder and cook until it's melted and everything falls into a place. In a few minutes, the mixture starts leaving the sides of the kadai. Add chopped Nuts at this point if you like. Remove onto a plate.

Make balls as per your choice, big or small while it's still hot. That's it. Enjoy! Yum! They stay good for a Week if refrigerated. Store them in airtight containers in the refrigerator and relish upto a week or two.
