600. California Farm Xmas Dinner: Canard a l’Orange
Canard a l’Orange means Duck with Oranges. Christmas, in midwinter, with fresh oranges, how luxurious can you get? The wild ducks have flown south because of the cold, and there are no fresh oranges yet, unless you import oranges. We eat farm raised ducks and geese for the Holidays.
Here is a family holiday classic festive dinner: goat cheese tart appetizer, duck , sauce, honey glazed carrots, truffle baked potato chips, sour dough bread, profiteroles and spiced fruitcake for dessert.

Cooking instructions
* Step 1
Wash duck, soak breasts and back two hours in salted water. Preheat oven to 425F degrees. Dry and Rub duck in and out with white pepper. Put breast down on rack of oven baking dish filled with 2 cups of water, bake 1 1/2 hour. Baste regularly with pan drippings to turn skin crisp.
* Step 2
Reduce oven to 350F degrees,flip duck with breast up, finish baking and basting ten more minutes. Turn oven off, rest duck in oven to reabsorb the juices in the meat. Pour pan drippings in pan, add juice of four oranges, flour, butter, sherry wine, paprika powder, chicken bouillion cube, pepper, salt, orange peel zest. Peel and slice remaining oranges, boil in sauce.
* Step 3
Serve duck on slices of orange, with sauce, truffled baked potato chips Anna, honey glazed carrots, sour dough french bread. Giant Chocolate Profiteroles for dessert. Freeze duck carcass and any leftovers to make a delicious duck cabbage soup. Happy Holidays.
