Baked Hyderabadi Lauz

#TTR #cookpadindia I present these Lauz to you all in a new form which is the healthy baked version. A healthy recipe from my City for you all. Lauz basically means rhombus-shaped. Since these are cut in diagonal shapes, they are called Lauz. And basically, these are deep-fried ones and are sweet that is enjoyed for a long time storing them in airtight containers. These are best enjoyed in the Summer holidays too. As a child, these were my favourite. If Milk and Ghee or Butter are added to the dough, they will be on the soft side. But if you want them to be a bit crispier, knead the dough with half of Milk and water each. And these are made with Semolina in larger amounts and All-purpose flour in just minor quantities in the Hotels here which are quite nutritious too and are very crunchy. They are called Khajoor. But Lauz is soft and melts in the mouth. Usually made at home by the mothers. This recipe that I am sharing here is with All-purpose flour and a little Semolina with Black seeds as an innovative twist. If desired, Semolina can be skipped. I wanted to incorporate these Seeds in the dough as they are very beneficial.

Cooking instructions

* Step 1

Make a smooth dough out of all the ingredients mentioned. If you want a softer Lauz, you can add only Milk while kneading without using water. Otherwise, you can follow the recipe exactly as given. Both the ways, you get yummy Lauz. But with Milk alone, you get softer ones without the crunch.

* Step 2

Keep aside well covered for about 15 minutes. Divide the dough into two or three equal balls. Roll each into a disc and cut into heart shapes as seen in the pics. Bake them in a preheated oven at 200° for 20-25 minutes. Arrange them in a Butter paper-lined baking tray and using a heart-shaped biscuit cutter, give them the desired shape. Brush with a little milk on top and sprinkle some Sesame Seeds. However, this is optional.

* Step 3

Serve them immediately or can be stored in airtight containers after they come down to room temperature for later use. They stay good for up to 15 days or more. Let them cool down completely before stacking up. Without Semolina, they will be a bit on the softer side. If you want a crunchy and crisp Lauz, add Semolina as mentioned. Sesame Seeds are purely optional. I added them just for a lovely look as it's the baked version.

* Step 4

Enjoy Tea-time with your favourite hot beverage. These can be packed to School as well. It's also a great Tiffin box idea too. Enjoy!
