Homemade Warqi Parathas

Warqi Parathas is a part of Awadhi Cuisine and originated in the kitchens of Lucknow nawabs. It's a popular Indian Flatbread that's characterised by the distinctive layers. These Parathas are well known to everyone and as a thorough foodie, this is absolutely a much known affair to me because these are made on every family get togethers and special occasions in my maternal home. And these are very special to me as well because my mom does this for me always. Refer to the pics for a clear insight into how it has to be rolled. That's it. This is my mom's way of doing it.
It's very much similar to the Square Rotis that I already shred but since these are Warqi Parathas or layered one's, there has to be quite a number of layers. And for that, you need to roll as shown.

Cooking instructions
* Step 1
Make a smooth paste out of Flour and Ghee using your hands. Keep it aside. Knead a smooth dough out of all the ingredients mentioned. Cover and keep aside for 30 minutes. Divide the dough into equal sized balls. Roll into an oblong shape at first. Roll this on the handle part of the rolling pin as shown. Apply Ghee and Flour paste all over it.
* Step 2
Roll it onto the rolling pin as seen in the pic. After done, cut in the centre on the topmost side. Now roll roll out a medium Paratha just as we all do. It's just that this will be a Square shaped Paratha. Cook it on a low heat applying a generous amount of Ghee on both the sides. Flip over and cook well on both the sides until golden brown and done.
* Step 3
Do the same for all the Parathas. Enjoy with your favourite gravy to go along with them. Flaky and crisp Parathas are a great treat to the tastebuds.
