Puri and Aloo Masala

#toc3 #cookpadindia A tasty variation to the popular Breakfast item. Wheat flour is a better alternative to the Plain Flour or Maida. These Bhaturas are as super soft and as fluffy as those made with Maida alone. Infact these are much more healthier too. Roll them with light hands and you will end up with fluffy puffed up Bhaturas or Puris. A super yum Aloo Masala is the yummy side dish that goes very well with Dosas , Puris and Chapatis. This one is simple and easy too. It tastes awesome with anything. One of the most liked side dishes for the first meal of the day, it therefore is a permanent feature at many a Breakfast tables in the Country.

Cooking instructions

* Step 1

Make a soft dough out of all the ingredients listed under dough preparation.

* Step 2

Divide the dough into golf-sized balls. Roll them with light hands. Deep fry in hot Oil on both sides. Keep an eye while frying. Check the oil temperature. If it is too hot, reduce it a bit and if it has become less hot, increase the flame accordingly.

* Step 3

It is advisable to roll all the Bhaturas and keep them covered with a cloth. Deep fry all one by one at the same time. Serve them hot with Aloo masala as I did or Chole masala.

* Step 4

Boil potatoes using a little salt. Peel and dice them into small cubes. Heat Oil in a Kadai and add Asafoetida and Dry Red Chillies. Now add Black Mustard Seeds. After they crackle, add Curry Leaves and shredded Ginger. Also, add Bengal Gram or Chana Daal. Keep the heat on low.

* Step 5

Now add sliced Onions and saute until translucent. Next add the Green Chillies, Salt, and Potato cubes. Cover and simmer for 10-12 minutes on low heat only. Stir in some homemade Dry Mango powder or Amchur.

* Step 6

After 10 minutes, sprinkle Garam Masala (it is optional) and garnish with Coriander Leaves. Serve it piping hot with your favourite dishes. Enjoy!
