Moong Sprouts Pulao

Sprouts are a way lot healthier. It's a known fact. These Moong Bean or Whole Green Gram Sprouts are a treat to our tastebuds.
Just look at this healthy and beneficial Pulao. Isn't it tempting?
And it's a best way to incorporate Sprouts in our daily food intake. Everyone will love this Pulao. Be it kids or the adults, they will definitely relish it if served alongside some Poppadums, Pickle and Raita of their choice. It's all good on it's own. It doesn't require anything extra but I love to serve this with some Homemade Potato Wedges or Chips.

Cooking instructions
* Step 1
Soak rice in enough water for almost 20 minutes. Cook al dente adding salt and lemon juice. Drain and set aside until use.
* Step 2
In a pan, heat ghee and add mustard and cumin seeds. Let them crackle a bit before adding garlic mince, curry leaves, bay leaves and cinnamon stick.
* Step 3
Saute sliced onions now with ginger garlic mince until translucent. The raw smell of the onions should fade away before adding red chilli flakes and slit green chillies. You can add spices according to your choice
* Step 4
Finally add the sprouts and stir gently to mix all. Cover and cook just for about 7-8 minutes. Do not cook more than that. The crunch should be retained. And sprouts need not be cooked for a long time. A simple stir fry is more than enough. Adjust salt as required.
* Step 5
After done, add cooked rice and mix well. Do it with very light hands without much pressure. Sprinkle garam masala for that lovely aroma. Serve this yummy pulao as it is or with any gravy or raita of your choice.
