Pearl Millet (Bajri) Masala Khichdi

Cooking instructions

* Step 1

Ready all the ingredients. Soak pearl millet for 8-10 hours. Change the water after every 4 hours. Soak mung dal for 30 minutes. Chop the vegetables. Ready the dry masalas. Drain the bajri and take it in a pressure cooker. Add water 3-4 cups (as per the desired khichdi consistency)

Add in the soaked and drained mung dal. Add salt, 1/2 tsp haldi and 1 tbsp ghee. Cook to 5-6 whistles.

For Vagaar: Meanwhile, take a kadhai and add in 3 tbsp ghee. Add in rai jira, khada masalas. Add in chopped garlic, ginger and green chillies.

Add in onions and saute it pink. Add in chopped potato and cook for 2 minutes. Add in beans and carrot

Add peas, salt and 1/2 tsp haldi. Mix. Cove and cook the vegetables well

Add in tomato and dry masalas. Mix 1/4 cup curd.

Add in churned curd and mix. Mix and simmer for 1 minute.

* Step 8

Open the cooker once the pressure subsides.Now add the khichdi into the Vagaar. Mix well

* Step 9

Cover and simmer and bring the khichdi to a boil. Your delicious and nutritious BAJRI KHICHDI is ready to serve.
