Strawberry 🍓 Rabdi (with compote)

Cooking instructions
* Step 1
Soak pistas in water for 1 hour. Peel and cut pistas into two.
* Step 2
For Compote:
Wash well and Chop strawberry🍓. Take them in a nonstick kadhai. Add in sugar.
* Step 3
Cook this mixture by stirring in between occasionally. Check for the thickness. The compote should not be runny.
* Step 4
It should coat the back of spoon. Then switch off gas. Cool this mixture and keep in fridge to chill.
* Step 5
For Rabadi:
Boil 2 litres of milk until reduced to 3/4th litre. Stir in between to avoid milk sticking to the base of the container. Scrape all the malai that sticks to the sides. This makes the rabadi creamier.
* Step 6
When milk is reduced to half quantity, add in 3-4 tbsp sugar. Cook by stirring carefully until 3/4 litte of milk remains. Chill in fridge for 3 hours.
* Step 7
Now take both the chilled rabadi and compote and mix them together. Mix manually, if you like malai-texture. Else, churn with hand blender until smooth.
* Step 8
Add in strawberry essence and mix.
* Step 9
A deliteful Strawberry🍓 Rabadi is ready. Chill and serve to your Valentines💝 and enjoy the Love ❤ and Smile on their face, as soon as they taste the FIRST SIP. 💕
