Cooking instructions
* Step 1
For special ghee:
Melt 1/3 cup ghee and cool it. Then place this ghee in fridge to half set for about 30 minutes(This makes margarine type special ghee).
* Step 2
Knead a dough with maida, salt, 2tsp special ghee and water.
Knead a medium soft dough. Cover and rest for 10 minutes
* Step 3
Make small portions of the dough.Take 5 portions and roll out 5 very thin rotis and keep aside. The rotis should be so thin that it is translucent to see through.
* Step 4
Apply the special ghee using brush and sprinkle dry maida on 1 roti. Place 2nd roti and apply the special ghee and sprinkle maida. This way make a pile of 5 rotis
* Step 5
Now roll the pile together carefully into a big rectangular sheet.
* Step 6
Cut away the borders and cut kharis into the desired shape using pizza cutter. Arrange the kharis in a greased plate.
* Step 7
Cover and keep these kharis in fridge for at least 1 hour. Now press one corner (in between your thumb and index finger)of khari to tighten all the layers. Deep fry on medium slow gas. Drain out oil properly.Sprinkle little chat masala.
* Step 8
Serve homemade pure kharis at the tea table and enjoy 😊
