Nihari is a deliciously smooth flour based stew with slow cooked mutton and a myriad of spices.This mutton nihari recipe takes ~4 hours to cook but it’s easy to put together. To get the best flavour, the mutton is cooked on very low heat for atleast upto 3 hours.

Cooking instructions
* Step 1
First of all, add meat along with bone marrow to a wide vessel with around 2 litres of water. Add Bay Leaves, Cloves, Cardamoms and Mace to it. Mix well and allow it to simmer on a low heat for an hour or two. It all depends upon the meat.
* Step 2
In a pan or a skillet or a kadai, heat a tablespoon of Ghee and add all the rest of the spices mentioned. Saute for a minute or two. Also add fried Onions and mix well.
* Step 3
Add this to the already slow cooked meat. Adjust Salt at this stage and also add the chopped Coriander Leaves. And finally, roast Whole Wheat Flour in a tablespoon of Ghee until aromatic and done. The raw smell shouldn't be there. Add this to a small bowl with little water making it a thin slurry. Now add this slurry to the vessel with cooked meat.
* Step 4
Mix well and simmer on a low heat for about 5 more minutes. Keep stirring every now and then. This is actually done to make it a bit thicker. Some people also use roasted Gram Flour or Besan instead of the Wheat Flour. That's it. It's all ready to be served with Naans or Khameeri Roti.
* Step 5
Tip- There is no need of extra Oil. We have used deep fried Onions and also ghee. So there is no need of any more oil and the meat and bone marrow both also have a lot of cholesterol.
