Phulkopi Dalna aka Cauliflower Curry

#cc2022 #week2 At the beginning of Winter when fresh cauliflowers arrive at the local markets in Kolkata dalna becomes the staple curry at the bong household for the next few months. "DALNA" is a typical Bengali vegetarian gravy dish prepared with no onion and no garlic, loaded with the aroma of ginger and asafoetida and with big chunks of potatoes and fried cauliflower

Cooking instructions

* Step 1

Heat 4 tbsp oil in a kadai and add cauliflower florets to it. Fry till the florets are well coated with oil and get a light brown hue (8-10 mins). Remove from oil and keep aside.

* Step 2

Add 2 tbsp of oil and temper it with bay leaves, cloves, cardamom, cinnamon,whole cumin seeds and green chilies. Add potato cubes and fry on medium heat for 2-3 mins.

* Step 3

Now add ginger paste. Make a paste of cumin and coriander powder by adding little water and add to the kadai. Sauté on low flame till the raw smell of ginger goes away. Add chopped tomatoes. Fry well till the oil is separated.

* Step 4

Add salt and sugar and give it a nice mix. Add fried cauliflower florets and give it a nice mix.Add one cup of water to it and cook it covered on low heat till potatoes are done.

* Step 5

Add 1/2 tsp ghee and 1/2 tsp garam masala powder and chopped coriander leaves to it. Serve with hot rice for lunch.
