Pav Bhaji has spicy mashed vegetables served with soft bread rolls called pav. Pav refers to the bread and bhaji means vegetables. A special blend of spices known as pav bhaji masala is used to flavor the dish, which is finished with lots of butter and coriander leaves. This flavorsome hearty breakfast meal tastes absolutely phenomenal. This homemade version of mine is incredibly delicious and my family prefers to have the bhaji sandwiched between the pav breads.

Cooking instructions
* Step 1
Boil the cauliflower and green peas separately as the odor of cauliflower is quite strong.
* Step 2
Now take the cut potatoes, carrots, beans, tomatoes and pressure cook with 3-4 whistles. Strain and keep aside the vegetable stock.
* Step 3
In a kadai add oil, the fry onions and garlic. Add the spices as mentioned (I do not add turmeric powder or food color) and saute. Now add all the vegetables and stir and cook till mashy.
* Step 4
Meanwhile take a pav bread and slice from the middle and lightly toast with butter. Finally add some butter in the potato mashed vegetable mixture and sprinkle chopped coriander leaves and spring onions. Place a spoonful mixture between the pav breads and your breakfast is ready. Sprinkle some pomegranate seeds and we love the sweet and salty taste of the sandwich.
