Buttery Mashed Potato

#toc1 #kidsspecialrecipe A delicious buttery potato mash with which your kid will absolutely fall in love.Mashed potatoes are my family favorite.This recipe of mashed potatoes yields comforting, smooth and fluffy mashed potatoes that you would like to make again and again. It is the best way to include potatoes in your kids meal.

Cooking instructions

* Step 1

Rinse 4-5 potatoes in water first using a colander. Brush off any mud if any. Rinse really well. Drain the water and then peel them. Boil in a pot of hot water and till it becomes soft.

* Step 2

The potatoes have to be softened, but they should not fall apart. The potatoes will take about 20 to 25 minutes to cook depending on the size of the pan, the thickness of pan and the intensity of the flame so boil carefully. Then mash them using a ladle.

* Step 3

In a pan in add 2 tablespoons butter and add the mashed potatoes well. Add 1 1/2 cup milk and add salt and pepper powder to taste. I used milk instead of cream to make it healthy and added slight more milk.

* Step 4

Mash till you get a smooth, fluffy and light consistency. Do not mash too much as this will break down the starches more and make for a gummy texture. Transfer to a serving plate and sprinkle freshly chopped coriander leaves and melted butter and serve hot alongwith boiled eggs and believe me your kid will finish off the plate in just a blink of eye. My son prefers to have it with hard boiled eggs.
