Chettinad Chicken
Chettinad cuisine is perhaps the most renowned in the Tamil Nadu repertoire. It uses a variety of spices and the dishes are made with fresh ground masalas. Cooking instructions
* Step 1
Marinate the chicken with salt and turmeric powder and keep for 1 hour
* Step 2
Dry roast all the whole spices and grind to a powder and keep ready
* Step 3
Now take vegetable oil in kadai and add cut onions, garlic, ginger paste and curry leaves and fry lightly
* Step 4
Now add the marinated chicken and fry on high flame, then lower the flame and add turmeric, salt.Add the spices mixture and now cook till oil seperates. Add the tomatoes and green chilli. Add water and cover and cook on medium flame till chicken is cooked well. Finally add few more curry leaves and serve with rice
