Honey Yoghurt blueberry custard pie (no cream)
A deliciously sweet and tart pie made with an eggy custard mixture using yoghurt instead of traditional cream. Found on a blogpost but adapted for todays lunch.

Cooking instructions
* Step 1
Roll out pastry and line your baking dish, prick the base and bake in a preheated oven at 180c for 10 minutes. Remove and allow to cool completely.
* Step 2
Drain your defrosted blueberries and scatter over the pie base. you could use fresh blueberries as well of course.
* Step 3
Mix your egg, Sugar and vanilla extract in a bowl.
* Step 4
Fold in your yoghurt to the eggy mixture and combine fully.
* Step 5
Pour your yoghurt mixture over the blueberries and bake in a preheated oven at 190c for 40 minutes. once out of the oven cool slightly and drizzle with honey.
