Honey Yoghurt blueberry custard pie (no cream)

Honey Yoghurt blueberry custard pie (no cream)

A deliciously sweet and tart pie made with an eggy custard mixture using yoghurt instead of traditional cream. Found on a blogpost but adapted for todays lunch. Thanks @Knivett for the recommendation and inspiration

Ingredient

Cooking instructions

* Step 1

Roll out pastry and line your baking dish, prick the base and bake in a preheated oven at 180c for 10 minutes. Remove and allow to cool completely.

Drain your defrosted blueberries and scatter over the pie base. you could use fresh blueberries as well of course.

Mix your egg, Sugar and vanilla extract in a bowl.

* Step 4

Fold in your yoghurt to the eggy mixture and combine fully.

* Step 5

Pour your yoghurt mixture over the blueberries and bake in a preheated oven at 190c for 40 minutes. once out of the oven cool slightly and drizzle with honey.
