Easy Rhubarb and cherry compote
Easy to make and so yummy sweet and tart, perfect drizzled over yoghurt and granola in the morning for #breakfast or over ice cream for a treat.
Cooking instructions
* Step 1
Wash and roughly chop rhubarb. Place in a pot with sugar and lemon juice.
* Step 2
Add a bag of frozen cherry and mix on a medium heat and stir until sugar dissolves, and juices from the fruit are released. Add the vanilla essence (if using). Stiring occasionally until fruit has broken down and soften.
* Step 3
Slowly simmer until you reach a thick consistency. Add a pinch of cinnamon close to the end of cooking. If the compote is still a bit runny after 20 minutes you can add some cornflour to thicken if you like.
👉 If adding cornflour mix 2 tsp cornflour in a cup with a little cold water to make a slurry and pour into your fruit mix towards the end of cooking. Stir to thicken
