Cavolo Nero Kale and garlic toasted sandwich (with/out bacon)
I made mine with bacon but this is equally delicious without it, as garlic is a perfect pairing for kale.
❄️ Kale is currently in season in January in the UK. I saw a lovely bunch of cavolo Nero Kale at my local grocers and wanted to give it a go. This recipe would work for any varieties including curly kale or any other supper green veg

Cooking instructions
* Step 1
Wash kale and remove the touch centre stalks. cut or roughly tear into smaller pieces.
* Step 2
Bring a pot of water to a boil and add your kale. Blanch the kale by boiling for 3 minutes and remove, then place under running cold water. Squeeze out access water and set aside.
* Step 3
In a pan on medium heat melt 1 butter cube. I make these in advance and store them in the freezer to ease of use. See how to make these butter cubes to use in this and any other recipe here:

Or if you don't have a butter cube already to hand. Here is what you need for this recipe today. A large knob of unsalted butter, 1 tsp crushed garlic, chilli, dried thyme. (any other herbs you like)
* Step 5
Add your bacon to the hot pan pf melted butter and herbs. Add your blanched kale
* Step 6
Top on crusty toasted bread. I had min with some chilli pickled beetroot on the side. See recipe here:
