Honey lemon & thyme chicken (with) roasted butternut squash
I love thyme. I use it in almost all my cooking because it reminds me of my mum and my childhood. She used thyme heavily in her Roasts and general week meals. So it's a herb I always come back to again and again. This recipe was relatively quick to make, easy and delicious.

Cooking instructions
* Step 1
Coat chicken breasts in olive oil and season well with salt and pepper. Place in a baking pan.
* Step 2
Peel and cut butternut squash into thick slices and oil and season.
* Step 3
Roast the chicken and butternut squash in the same pan for 30 mins.
* Step 4
In the meantime mix together finely grated rind on lemon, thyme and honey. And prepare any desired side dishes (I love new potatoes and a fresh crunchy red cabbage salad)
* Step 5
At 30 minutes. Remove the butternut squash from the pan.
* Step 6
Drain off most ofthe excess juices and oil from the chicken into a cup for later.
Cover the chicken with the lemon honey glaze and return to oven for another 8 -10 minutes. (Basting every few minutes)
* Step 7
Once chicken is cooked. Serve up with your roasted squash, potato and salad.
* Step 8
For additional honey glaze return the juices and oil previously removed from the chicken back to the remaining glaze in the pan to loosen. Pour over as needed.
