Sheer Khurma also called Sheer Korma is a rich Mughlai dessert of vermicelli pudding made during the festive occasion of Eid ul-Fitr. Sheer korma is made with milk, vermicelli, dates, nuts, and sugar. In the Persian language ‘Sheer‘ means milk and ‘Khurma‘ is dates.

Cooking instructions
* Step 1
Boil milk in a pan. Soak saffron strands in 2 tbsp of milk in a separate bowl. Deseed dates and chop in small pieces.
* Step 2
Heat ghee in a wok. Add almonds, pistachio, and cashew nuts and fry for 2-3 minutes and transfer it to a plate. Now fry melon seeds and transfer them to a plate.
* Step 3
Now add seviya in wok and roast till it turns golden brown and an aroma starts coming up.
* Step 4
Add roasted seviya in boiled milk and give it a boil and then slow the flame.
* Step 5
Let it simmer on low flame for 5-7 minutes.
* Step 6
When it thickens add fried dry fruits, melon seeds, desiccated coconut powder, and chopped dates and mix and cook for 2 minutes. Add saffron-soaked milk to it.
* Step 7
Serve hot or chilled garnished with chopped almonds and pistachio.
