#boxweek2 #Sooji #Rava Kesari also known as suji halwa is a traditional Indian pudding made with semolina, ghee, sugar, cashews, saffron and pistachio.

Ingredient

Food ration :

2 servings

Cooking time :

25 minutes
3/4 bowl

rava

1/4 bowl

rice flour

1 bowl

sugar

1 1/4 glass

water

3/4 bowl

desi ghee

Cooking instructions

* Step 1

Heat ghee in a wok.

* Step 2

Add semolina and rice flour in ghee and mix. Keep flame low. Roast it.

* Step 3

In a separate pan boil water. Add sugar, coarsely grinded Green cardamoms, chopped coconut and saffron strands. Boil till sugar dissolves completely. Switch off the flame. Keep aside.

Roast the semolina mixture till it turn aromatic. It may take 7-8 minutes.

Add sugar syrup in it and keep on stirring till it turn thick. Add cashew nuts and pistachio.

When the mixture turns thick switch off the flame.

Serve hot with milk.
