A samosa is a fried or baked pastry with a savoury filling, such as spiced potatoes, onions, peas, cheese or lentils. It may take different forms, including triangular, cone, or half-moon shapes, depending on the region.

Cooking instructions
* Step 1
Mix all three flours in a bowl. Add salt, carrom seeds cooking oil for moyan and mix well. Now with the help of water knead a tight dough and keep aside for 15 minutes.
* Step 2
Peel potatoes and mash it with fork. Boil peas in a pan for 2-3 minutes. Keep aside.
* Step 3
Now heat oil in a non-stick griddle. Put cumin seeds and when cumin seeds splutter put boiled peas, chopped green chilli, grated ginger and mashed potatoes. Add all the dry masala for stuffing and mix well. Sauté for 2-3 minutes on medium flame. When mixed thoroughly switch off the flame. Add coriander leaves.
* Step 4
Now knead the dough again for 2 minutes. Apply cooking oil on your hands. Divide the dough in 4 equal parts and shape it in round. Roll a chapati. Cut it in 2 equal parts from centre. Make a cone of half part.
* Step 5
Fill stuffing in this cone and bring the edges together and seal it by applying 3-4 drops of cook oil.
* Step 6
Like wise make all the samosas.
* Step 7
Now heat oil in a wok. Add samosa in it and deep fry till golden. Flip the side and fry from other side also. Likewise make all the samosas.
* Step 8
Serve hot with sauce or chutney or sounth.
