TC Slightly Sweet Vegetable Curry

Cooking instructions

* Step 1

Heat Oil in a Dutch Oven. Add Curry Pastes and fry for a minute, stirring. Add Onion, Garlic and Ginger, stirring frequently, till Onions are translucent. Add Carrots, Potatoes and Butternut, stirring occasionally, cook till edges of the vegetables start to soften.

* Step 2

Add Broccoli, Green Beans and Bell Pepper and cook, stirring occasionally, about 5 minutes more. Add Coconut Cream, Stock, Sugar and Fish Sauce. Bring to a boil then reduce the heat and simmer till all the vegetables are cooked through and flavours are combined.

* Step 3

Serve with rice or noodles and garnish with Coriander Leaves.
