Garganelli con speck, finferli e zafferano
My favourite mushrooms again in another delicious yet simple pasta. Garganelli is what is known here as a speciality pasta. It is made with egg and has a different texture to normal pasta. Goes great with this sauce! #italian #pasta #dinner #mainmeal

Cooking instructions
* Step 1
Bring a large pot of salted water to the boil and cook pasta according to instructions. Cook onions gently in olive oil. When soft, add mushrooms, stir and turn up the heat
* Step 2
After 2-3 mins, add the speck and then the saffron. At this point it should be bubbling, add the wine and let it evaporate. Right at the end add a ladle of pasta cooking water and parsley
* Step 3
Drain pasta al dente. Add to sauce, mix and serve. Add parmesan if you fancy
