Chicken and mash with a creamy mushroom and dill sauce
I really fancied a creamy sauce. Dill is a favourite herb and I picked up a punnet of mixed mushrooms at the supermarket. Was delicious with chicken and mash
Cooking instructions
* Step 1
Preheat oven to 200. Wash and dry chicken, spray with olive oil and roast for about an hour or until cooked. Peel and chop potatoes, cook in salted water. Heat some oil and butter in a pan, when foaming, add the mushrooms. Cook for about 5 minutes. Then add the stock. Cook on medium heat to reduce it
* Step 2
Add the cream when the sauce has reduced. Season to taste
* Step 3
Stir and add a good amount of dill. Mash your potatoes when cooked with another knob of butter and serve
