Melanzane a funghetto

Cooking instructions
* Step 1
Wash, slice and dice the aubergine. Dry well on kitchen paper. Heat a good amount of olive oil in a large pan. Fry in batches until the cubes turn slightly brown. Drain on kitchen paper, set a side
* Step 2
Drain some oil from the pan so there's enough to coat it. Add some chopped garlic. When it starts to turn brown, add the aubergine and tomatoes. Cook on medium heat for about 5-6 minutes. Add salt and basil
* Step 3
Set a side in a bowl and leave for as long as possible. Over night in the fridge is best. Serve slightly warmed up with meat or fish 😊
