Mezzi paccheri con calamari al cartoccio
Paccheri is a type of pasta traditionally used in Neapolitan cuisine. This dish is very impressive to serve yet also very simple #italian #pasta #seafood #dinner
Cooking instructions
* Step 1
Wash and dry the calamari. Bring pot of salted water to the boil for the pasta
* Step 2
Fry garlic and chilli in a little oil
* Step 3
Add calamari and cook on medium for 1 min. Add wine and let it evaporate
* Step 4
Add tomatoes and simmer on low for 30 mins. Start to cook pasta with 10 mins to go (this pasta usually takes quite long to cook, check instructions) turn on the oven to 180. Add parsley at the end
* Step 5
Prepare 4 large squares of baking paper. Drain pasta THREE mins before cooking time is up. Add to sauce and mix. Divide pasta equally on to baking paper. Wrap each one up like a parcel. Bake in the oven for 6-7 mins. No more or pasta will overcook
* Step 6
Serve in a bowl, inside the paper :)
