Orata siciliana (Sicilian seabream)
I adore the flavours from the south of Italy! This can be made as a starter or make more for a main meal. Serve with salad or veg and of course crusty bread :) #italian #starter #mainmeal
Cooking instructions
* Step 1
Put breadcrumbs in a bowl. Add a drizzle of olive oil and lemon juice. Mix well
* Step 2
Add chopped olives and capers. Add whole basil leaves. Cover with cling film and leave a side for an hour or so
* Step 3
Prep fillets. Wash well and make sure there are no bones. Dry well. Add breadcrumb mix to each fillet. Roll up and secure with cocktail sticks
* Step 4
Peel and roughly chop garlic. Add to pan, add oil and cook gently for 1-2 mins. Add tin of chopped tomatoes. Stir and simmer for 2-3 mins
* Step 5
Add fish. Turn a few times to coat in the sauce. Cover and cook for 7-8 mins or until cooked. Salt to taste
* Step 6
Garnish with basil and enjoy :)
