Spicy aubergine spaghetti
Cooking instructions
* Step 1
Wash the slice aubergine and dry well using kitchen paper
* Step 2
Put pot on to boil for pasta, add salt to taste. Chop garlic and gently fry in oil. Chop and add chilli
* Step 3
Chop and add aubergine. Fry for about 8-10 mins or until it starts to become nice and brown. Add chopped tomatoes and simmer gently for about 6-8 mins. (Water should be boiling. Add spaghetti to pot and cook according to instructions) at the end of cooking time, add chopped herbs to sauce.
* Step 4
Drain pasta add to sauce mix well and serve :)
