Octopus soup

A recipe from the south of Italy, more specifically Naples. Food from the south of Italy is hearty and simple but full of flavour. If you have a good local fish monger, he'll also clean the octopus for you

Ingredient

1 clove

garlic

to taste

Cooking instructions

* Step 1

Wash and chop the octopus into cubes.

Chop garlic and gently fry in olive oil without burning it. Add the octopus and cook for a few minutes.

* Step 3

Turn up the heat and add a splash of wine, some dried chilli and chopped tomatoes. Then turn down the heat and simmer on lowest heat for about 70 mins, uncovered so the sauce becomes dense. During cooking, stir every now and then, add capers towards the end if desired. Serve with fresh parsley and bread
