If you haven’t tried this fantastic recipe yet, it’s time now that you do. The taste of lamb/ Mutton Paya (trotters) curry will change your definition of Delicious. This recipe is made in almost every Muslim house during Bakra- Eid. Those who offer sacrifices get the trotter and prepare the menu. Bakra- Eid is celebrated for three days. Therefore, people offer their sacrifices according to their timings during these three days. This recipe is a people’s gatherer. My mum usually made this recipe the second day calling upon our relatives and friends. Lamb / Mutton Paya recipe variates from place to place. Some make after smoking the trotters, some use tomato, and some make it thin consistency like soup. This amazingly delicious recipe in your Bakr- Eid Menu. Cooking instructions

* Step 1

Wash and clean trotters. Take a large pot, heat ghee / oil and add all whole spices fry few seconds then add onion fry until light brown. Add ginger paste, garlic paste and sauté for 2-3 minutes.

Add ginger paste, garlic paste and sauté for 2-3 minutes. Add all trotters / paya and fry for 3-4 minutes then Add red chili powder, salt and turmeric powder and fry for a minute then add tomatoes fry well till all tomatoes soft and Cook well.

Add yogurt and mix well until oil separates. Now add 6-7 cups of water (if you like more runny consistency so add more water) and cook on low flame until done around 3-4 hour.

Add some garam powder and put it on simmer for 10 minutes or until desired consistency. Mutton paye is ready, garnish with fresh coriander, green chilies and ginger. Served with naan, crusty bread or rice.

✅ NOTES: ➡️Trotters are called “Paya”. They are the feet part of an animal. They can be a bit hard to get depending on your location/Country. Be careful to choose the trotters. They need to be tender, or they will take longer to cook. The same goes for meat as well.

* Step 7

➡️Wash the trotters properly. Cook them directly on an open flame to give them a smoky flavour.

* Step 8

➡️The store-bought ginger-garlic paste will be okay to use. If you want, you can mince them as well instead of paste.

* Step 9

➡️Add a little bit of tenderizer to make the trotters cook faster. ➡️We use less water here as we do not want the dish to be too thin or runny. Be careful with that.
