Sri Lankan Egg Curry

I love this Egg curry with onions, tomatoes, lot of curry leaves, pandang. Full of flavour and taste

Cooking instructions
* Step 1
Boil the eggs, deshell and set aside, chop onions, tomatoes
* Step 2
In a pan heat oil, add minced garlic and stir for 2 mins, add chopped onions (half), stir to get rid of raw smell. Add curry leaves, stir
* Step 3
Add chopped tomatoes and mix well, add curry powder, red chilli powder and mix well. Add eggs, mix and cover to cook
* Step 4
Add turmeric powder, kasuri Methi powder and mix well. Add coconut milk and mix well. Add rest of the chopped onions, slit green chillies, more curry leaves, pandan leaves and stir once, set aside
