Dharosh Posto / Okra in Poppy seed paste

This is a classic from Bengali cuisine. Ideal for Summer months and one of the best way to enjoy Okra or Dharosh
Ingredient

Cooking instructions
* Step 1
Wash all veggies well. Cut the edges of Dharosh and peel the potato. Cut the potato into wedges
* Step 2
In a bowl add mustard seeds and Posto and water, soak for 2 hrs. Drain and Add to a blender and add chopped green chillies. Add 5-6 Tbsp water and make a runny paste, set aside
* Step 3
In a wok heat mustard oil, add Dharosh and fry well, set aside. In the same oil add whole red chillies and nigella seeds and fry for 1 second. Add potatoes and fry till golden
* Step 4
Add chopped tomatoes and fry, cover to cook for 3 mins.
* Step 5
Add Posto-sorshe bata and mix well, cook for 5 mins to get rid off the raw smell. Add turmeric powder, salt and sugar. Mix well
* Step 6
Cover to cook the potatoes
* Step 7
Add fried Dharosh and mix well. Don’t overcook as Dharosh would turn mushy. Crunchiness is needed and best enjoyed in this dish
* Step 8
Drizzle mustard oil and set aside
* Step 9
Serve hot with steamed rice and enjoy a cuisine from Bengal
