Ingredient

Preparation time-10 mins, Cooking time-20 mins
2 slices

White Bread

1/2 cup

mushroom

1 sprig

baby spinach

1

egg

as required

Canola oil

as per taste

Salt

as required

Pepper

Cooking instructions

* Step 1

Toast the bread slices and set aside

* Step 2

Wash the spinach. In a pan heat 1 Tbsp canola oil and add the spinach, add pinch of salt and stir until water is absorbed. Set aside

* Step 3

Plate the spinach on the toasted slices

* Step 4

In the same pan add 1 Tbsp canola oil and add minced garlic, stir for 1 min and add sliced mushrooms, add salt and stir until mushrooms have moisture in it and is little brown. Set aside and plate on spinach

* Step 5

In the same pan add rest of the Canola oil and break a egg to make a poach. Place on one toasted bread

* Step 6

Cut the cherry tomatoes into halves and place on the other toast

* Step 7

Add salt and pepper

* Step 8

Enjoy a healthy open sandwich
