Cooking instructions
* Step 1
For dough - in a bowl add the flour, oil, salt and add adequate water to make a dough. The dough should be semi soft. Keep it covered with a muslin cloth for 10 mins
* Step 2
For Filling - boil the potatoes in a pressure cooker for 4 whistles at high flame, set aside to cool, strain water, peel skin and mash coarsely
* Step 3
In a wok heat oil, add cumin seeds, whole red chilli and ginger paste and cook till raw smell leaves.
* Step 4
Add mashed potatoes and cook for 2 mins. Add cumin powder, coriander powder, red chilli powder, turmeric powder. Add coarsely chopped walnuts and cook for 2-3 mins
* Step 5
Add lime juice, chopped green chilies and salt. Mix well. Set aside and cook
* Step 6
To make Samose - on a kitchen top roll the flour and make a small circle, fold into two and start folding like a cone shape, add 1 tsp of the stuffing and close the edges with flour slurry. Make sure the Samose stands as frying will be easy
* Step 8
In a pan heat oil and on medium flame deep fry the Samose until golden in colour
* Step 9
Plate with Tea, green chilies, green Chutney and enjoy the Monsoon season with a classic Indian snack
