Happy Navratri Chefs! I am celebrating with Khajur Burfi as it’s most healthy way of enjoying Burfi. I added dried cranberries to reduce the sweetness of Khajur or dates
Ingredient

Preparation time-20 mins, Cooking time-30 mins
Cooking instructions
* Step 1
In a pan add poppy seeds and on low flame dry roast for 2 mins. Set aside
* Step 2
Chop all dry fruits and set aside. Cut Dates and extract the seeds. Set aside
* Step 3
In a pan add 1 Tbsp ghee and add all chopped dry fruits and roast for 5-6 mins. Set aside.
* Step 4
In the same pan add rest of the ghee and add chopped Dates. On low flame keep stirring till its softened about 7-8 mins. You may need two spatulas to soften the Dates. I didn’t need two spatulas. I didn’t add to the blender to make a paste.
* Step 5
Add the roasted dry fruits to the Dates. Switch off the flame and keep stirring until all well mixed. Add cranberries and 1/2 of roasted poppy seeds. Mix well
* Step 6
Set aside on a wooden block and while tolerably hot roll like a cylinder shape. Keep pressing with your inside palm and make a cylindrical shape while pressing the sides inside.
* Step 7
Divide and fold to a aluminium foil tightly and refrigerate for 30 mins
* Step 8
Discard the aluminium foil and with a sharp knife cut the Burfi’s.
* Step 9
Plate and enjoy. You can keep in an air tight container refrigerated for 15 days
