Dhaba Moong Sabut Dal Tasty and Healthy

Dal is one of the staple food of many people. When this dal is prepared in a dhaba street side there is no comparison with the other polished dals prepared in the other restaurants .The authentic moong sabut dal is very simple yet very tasty because of the tadka and seasonings which are infused well in this dal. The dollop of desi ghee gives a creamy and rich texture. The showstopper is the roasted garlic and fried onions on it , which gives a zing to this simple daal I gave a little twist in the Tadka using curd instead of chopped tomatoes.which tasted equally good. #ws3

Ingredient

Salt

4 cups

water

1 tsp

ginger

1 tbsp

fried onion

as per taste

Kitchen king masala

1/2 cup

Beaten crud

1 tbsp

desi ghee

Cooking instructions

* Step 1

Soak the dal for few hours, or overnight. Pressure cook with little salt, little turmeric, give 2 whistles, sieve it and keep aside. Reserve its water for later use.

In a kadhai, add butter and ghee, heat and add cloves. Then add chopped garlic, roast till it becomes little brown. Add the onions, cook till pink. Add ginger, then one by one add left over turmeric and red chilli powder and other dry masalas. Mix in the beaten curd, cook nicely, till it releases the oil. Add the sieved daal, check the salt add the daal 's left over water, keeping the consistency little thicker than the regular thin consistency daals.

Add the fried onions, mix nicely, cook for 5 more minutes, garnish with butter, coriander and little more fried onions.

Notes: For the fried onions, cut the washed onions in very thin slices and fry them on a medium to low flame, till crisp. Left over can be stored in a zip lock till one month in the fridge. they will not spoil. you can use it for your biriyani, soup or daal, later on.
