Focaccia Garden Bread
This Italian bread is an eye-catching eggless bread. A beautiful and perfect canvas of veggies topped on the basic bread loaf. This is an eggless version, a bit chewy and olive oil-rich. It has a variety of herbs and veggies arranged in garden art. With the help of beautiful colorful vegetables available, I have tried to make this edible garden. This can be served with hot minestrone soup, a perfect meal by itself. What more one can ask for!! #cppassport #cppitaly

Cooking instructions
* Step 1
Put 100 ml warm water in a bowl, add in sugar and yeast, mix gently and keep it covered in a warm place for 5-7 minutes for the yeast to activate. In a broad bowl, shift maida, salt milk powder, all together. Make a well in the center and add the yeast mixture. Knead well, adding the remaining water to make a soft, sticky dough. Keep kneading for at least 5- 7 minutes. Add oil and further knead the dough, stretching and knocking the dough to activate the gluten and to get smooth and elastic.
* Step 2
Rub oil in a bowl, and place this round ball of dough. Cover it with a cling wrap and keep it in a warm place for at least 1.5 hours. When the dough is fermented, knock it to remove the air bubbles, Spread it on a long rectangle or square greased baking tray. Spread the dough flat and dig the dough with your fingertips. as shown in the pic. Pour some more olive oil over the dough and spread the red pasta sauce over it. Create a garden art on top of this dough.
* Step 3
Use vegetables as shown in the pic. Sprinkle herbs, chili flakes and keep it again for second proofing for 30 minutes. Bake it in a pre-heated oven for 25-30 minutes. or till a light golden brown crust is formed. Check by inserting a toothpick. The timing of baking may vary from oven to oven. After it is baked if you want to add some more greens. Spread some fresh parsley and glaze with butter or olive oil with the help of a brush. Cut in the desired form and serve with hot minestrone soup.
