Cooking instructions

* Step 1

Dice your mushrooms and onions, and then start to cook those first since they will take the longest. Use a tablespoon of unsalted butter for each.

* Step 2

Using a 12-inch skillet or larger, place the butter, olive oil, and if using the rosemary, thyme, and 1 smashed garlic clove into a large skillet over medium-high heat.

* Step 3

Allow the butter to melt and the olive oil to heat through. When the herbs start popping and sizzling, remove them and the garlic clove, discard. Add the potatoes in a single layer, season with a generous pinch of salt and pepper, cayenne, garlic powder, onion powder, and smoked paprika, toss to coat evenly.

* Step 4

Cook the potatoes for a total of 8-10 minute, flipping and tossing them every 2-3 minutes to ensure even browning. Taste for seasonings and adjust to preference.

* Step 5

While your potatoes are cooking, proceed to start cooking your eggs, bacon, sausage and ham as well, to insure they get done the same time as the potatoes.

* Step 6

Once your potatoes have finished cooking, you can add in your cooked onions and mushrooms into the skillet, and sprinkle cheese around the skillet to your liking.

* Step 7

Once proteins are done, you can either serve everything on the skillet, or if there is no room, then plate the cheesy-potato mixture with a portion of eggs, ham, sausage and bacon for everyone. Enjoy!
