Shole mash-hadi

💯 northeastern Iran meat and cereal stew This food is cooked in Mashhad, in huge amount like at least 1000 serving to be distributed among people for charity; specially in muharram and Safar and Arbaeen for mourning Imam Hussein's martyrdom anniversery. #Persian_cook For those who need exact Persian name: شله مشهدی

Ingredient

100 gram

lamb tail fat

2/3 cup

rice

2/3 cup

wheat

1/3 cup

chickenpeas

1/3 cup

kidney beans

1/3 cup

navy beans

1/3 cup

red beans

1/3 cup

lentils

2/3 cup

split pea

2 spoon

tomato paste

1 tsp

salt

5 spoon

oil

3 glasses

water

Cooking instructions

* Step 1

Drench wheat and rice together. Drench other cereals together. For 24 hours

* Step 2

In a pot, cook wheat, rice, onion and lamb tail fat for two hours.

* Step 3

In another pot, cook meat, other cereals and spices for 2 hour.

* Step 4

Blend cooked wheat pot and add it into the cereals' pot.

From now on, you have to stir the pot every 30 minutes with a wooden spoon until the cereals break. Shole is a very heavy and thick soup. It must cook until water is almost dried and the beans is almost broken. Cook at least for 4 hours.

Gheyme: this a decoration for shole. Shole tastes much better when there is gheyme in your dish.

* Step 8

For gheyme mix every thing together and let cook for at least 2/5 hours. In this picture, the orange food is gheyme.
