Summer bean salad

Great for summer lunches because it can made ahead and travels well. Avacado, feta cheese or italien dressing are encouraged additions. Also makes a nice side dish with meat from the grill!

Cooking instructions

* Step 1

Prepare beans per pkg, usually boil for 2 mins then soak for an hour and drain well.

* Step 2

Chop tomatos and shallots, add garlic and set aside

* Step 3

Roast pepper til blistering, chop into bit size pieces

* Step 4

Chop cumcumber into large chuncks

* Step 5

Combine all ingredients and season to taste.
