Easy seafood "paella"
Probably not the most orthodox of the paella recipes but this is how I have always cooked my seafood rice since I was a kid. I remember this being a highlight of the weekend cooking my rice for the family.

Cooking instructions
* Step 1
Sautee the frozen seafood mix on a bit of olive oil until nearly thawed. Add the peas and peppers and sautee a couple of minutes
* Step 2
Add the rice and coat in the oil with the vegetables. Add the stock
* Step 3
Add a pinch of saffron strands
* Step 4
Simmer for about 20 minutes or until stock absorbed and rice cooked.
* Step 5
Remove from hob and rest for 5 minutes covered with clean tea towel
