Chicken, Carrot, Feta and Mint Fritters

tahini

Cooking instructions

* Step 1

Combine the chicken mince, carrots, oats, tahini, Feta, shallots, mint and seasoning. Use your hands, but you might consider wearing gloves.

* Step 2

Put mixture, covered, in the fridge for 30 minutes.

* Step 3

When ready to cook, press small handfuls of mixture into balls and flatten them into patties.

* Step 4

Heat oil on a skillet or frying pan over a medium high heat

* Step 5

Fry fritters for 7-8 minutes each side. You may need to cook two batches. Check that they are cooked through by cutting into one, it will be cooked through when there is absolutely no pinkness.

* Step 6

Leave to stand for 10 minutes or so.

* Step 7

Serve with tzatziki. I have a recipe for tzatziki here...
