Yogurt Avocado Marble Cake
This is a perfect cake to enjoy in the evening with a cup of hot coffee or hot tea.
Cooking instructions
* Step 1
Preheat your oven to 350°F/175°C. Bring all the refrigerated ingredients to room temperature. Use a blender to purée your avocado into a smooth paste. Than using an electric mixer, mix the butter and sugar until it becomes smooth and light in color. Beat in one egg at a time. Scrape the sides of the mixing bowl with a rubber or silicone spatula once or twice to mix in all the batter.
* Step 2
Sift the dry ingredients into a bowl and set aside. In another bowl combine the yogurt, smooth avocado and vanilla extract and whisk them all together. Add the dry ingredients and the yogurt mixture alternatively into the batter in the mixer. Ladling in large spoons of each, starting and finishing with the flour.
* Step 3
Mix everything until the batter is well-blended. Scoop out 450 g of this avocado cake batter and put it in separate bowl for the chocolate batter. Add cocoa powder, and mix until it is smooth. Place the batters into a prepared Bundt by alternating spoonfuls of avocado batter with the chocolate batter.
* Step 4
Then with the end of a wooden skewer or knife, gently draw swirls throughout the batter to create a marble pattern. Bake it for 35 - 40 minutes or until a toothpick inserted in the center comes out clean. Remove it from the oven and let it cool completely. You can dust the top of the cake with powder sugar. Enjoy! 😉
