Chicken cutlet Parmesan

Cooking instructions

* Step 1

Preheat oven to 450.

* Step 2

Cut chicken breasts in half length wise. Place between 2 sheets of plastic wrap and pound to 1/2-inch thickness.

* Step 3

Season both sides of chicken with salt and pepper. Using a small mesh sifter, dust chicken with flour.

* Step 4

Beat eggs in shallow bowl. In a separate shallow bowl, combine panko and Parmesan cheese.

* Step 5

Coat chicken in eggs then crumb mixture, pressing to get crumbs to stick evenly. Let coated chicken rest for 10-15 minutes to allow coating to dry slightly.

* Step 6

In a large nonstick skillet, heat about a half- inch of olive oil until shimmering. Cook chicken in hot oil until golden brown, about 2 minutes per side. Work in batches to not overcrowd the pan.

* Step 7

Transfer chicken cutlets to a baking dish. Top each with a dollop of sauce, mozzarella, and provolone. Bake about 15 minutes or until internal temp measures 165. Top with fresh basil.
