BK's Italian Sausage Gnocchi Bake
Can't take credit for inventing this one. This is my spin on a meal we originally got through EveryPlate. If you haven't tried them yet, you should give them a look.

Cooking instructions
* Step 1
Preheat oven on low broil.
* Step 2
Bring medium pot of salted water to a boil.
* Step 3
Break up gnocchi by hand and add to boiling water. Cook per package directions (usually about 3 to 4 minutes). Drain and reserve one cup of the pasta water. Do not overcook or they get mushy.
* Step 4
While preparing the gnocchi, add 1 tbsp of olive oil and onion to medium (preferably oven proof) pan. Season with salt and pepper. Cook over medium-high heat until softened. About 3 to 4 minutes.
* Step 5
Add sausage, garlic, and Italian seasoning to pan with onions. Break up sausage and cook until sausage is browned. About 4 to 5 minutes.
* Step 6
Stir in diced tomatoes and tomato paste. Add another pinch of salt and pepper. Cook another 2 to 3 minutes.
* Step 7
Once gnocchi is drained. Add cream cheese, 3/4 cup of the reserved pasta water, and 2 tbsp butter to pan with sausage. Reduce heat to medium and stir until well combined.
* Step 8
Add drained gnocchi to pan and stir to coat well. Remove from heat.
* Step 9
Transfer mixture to a lightly greased casserole pan here if you didn't use an oven safe pan to start.
* Step 10
Cover gnocchi mixture with shredded mozzarella and broil until cheese is lightly browned and bubbly. About 2 to 3 minutes. Serve and enjoy.
