Mackerel Tuna with Thai Basil and Green Tomatoes

Cooking instructions
* Step 1
Pour vegetable oil into a deep fryer over medium heat. Fry the the fish until fully cooked. Drain on the paper towels. Let it cool. (Goreng ikan sampai matang. Tiriskan. Diamkan sampai suhu ruangan)
* Step 2
Then shred the fish with fork. (Kemudian suwir- suwir ikan dengan menggunakan garpu)
* Step 3
Blend well ingredients a with the shredded fish. Set aside (campur bumbu a dengan suwiran ikan goreng. Sisihkan)
* Step 4
Over a medium heat, 2 tablespoon vegetable oil on a medium frying pan. Sauté garlic and shallots until fragrant, then add in dried galangal, Thai chili and bay leaves. (Panaskan minyak goreng dalam penggorengan di atas api sedang. Tumis bawang merah dan bawang putih sampai wangi. Lau masukkan lengkuas, daun salam dan cabai rawit)
* Step 5
Stir in the fish and the chicken stock.cook for 5 minutes, reduce the heat. (Masukkan suwiran ikan dan air kaldu ayam, masak selama 5 menit, kecilkan api)
* Step 6
Stir in green tomatoes and basil. Cook until basil is wilted. Remove from the heat. (Masukkan tomst hijau dan daun basil. Masak sampai daun basil layu)
* Step 7
Adjust the flavor to suit your taste (koreksi rasa)
* Step 8
